
Today a wondefull recipe : Frozen nougat and honey madeleines

Ingredients for the madeleines :
-125g melted butter
-3 eggs
-130g caster sugar
-150g flour
-½ packet of baking powder
-Zest of ¼ lemon
-50g Orange blossom honey
Ingredients for iced nougat :
-700 gr whipping cream
-5 egg whites
-100g lavender honey
-120 gr sugar
-50g glucose
-125 gr nougatine
-185 gr raspberries
-30 gr of raspberry eau-de-vie
-190 gr raisin
-170 gr of custard
-50g chopped roasted pistachios
-50g chopped roasted almonds
Madeleines Preparation:
Blanch eggs and honey.
Add the lemon zest and salt.
Stir in flour, baking powder ½ sachet and melted butter.
Dresser into molds and bake at 220 ° C.
Preparation of nougat:
Soak the raisins in water spirits hot.
Cook honey, sugar and glucose to 121 ° C.
Beat the egg whites with the cooked sugar. It will become meringue.
Whip the cream, not to much (3/4).
After cooling of the meringue, mix it with the pastry cream and whipping cream.
Add nougatine, grapes, pistachios and almonds, gently stir in the raspberries.
Arrange in a glass and freeze.
